Certificate II in Hospitality (Kitchen Operations)
Hospitality Training Australia is offering a commercial cooking course commencing:
- 12th June 2012
This specialisation focuses on the basics of cooking which takes students from knife sharpening and precision cutting to a la carte, functions and set menu cooking.
Students spend 1 day in off-the-job classes, 1 day kitchen theory and 1 day at our Fagor Cooking School and 1 service period shift in Schon Training Restaurant averaging attendance of 20 hours per week.
Units covered in during this 20 week course include: preparing appetisers, salads, stocks, sauces and soups; preparing vegetables, fruit, eggs and farinaceous dishes; hot & cold desserts.
Participants also receive training in: OH&S; food safety; food presentation; knife sharpening; cutting techniques etc.

Course Cost
- $125.00 per person, includes knife kit, uniform, cook books, certificate, food costs and materials.
