A Career in Cooking

Hospitality Training Australia is receiving enrolments from apprentices wishing to commence or continue their Certificate III in Hospitality (Commercial Cookery) training.

Apprentices can choose to complete their training either as a Day Release or Block Release.

New groups commence 2nd February 2009.

Apprentices train at our state of the art Fagor Training Kitchen located at 112 Peel Street North Melbourne (next door to the Queen Victoria Market).

First, Second and Third year apprentices enrolled with other TAFE are welcome to transfer across to Hospitality Training Australia. To do so please complete an Enrolment Pack.

Fagor Training Kitchen

Hospitality Training Australia completes the schooling component of the Certificate III in Hospitality (Commercial Cookery) Apprenticeship in two years. This training program combines off the job kitchen training with workplace based assessment. This method halves the total number of training days that you spend at TAFE and also means that the time you do spend at TAFE is spent in a commercial training kitchen.

Once we receive your enrolment we can book you into the Day Release or Block Release group that best suits you and your employer.

Hospitality Training Australia delivers the apprenticeship in commercial cookery over two years combining intensive off the job kitchen training and workplace based assessment.

The cookery training is delivered off the job at Hospitality Training Australia’s Fagor Training Kitchen located at 112 Peel Street North Melbourne (adjacent to the Queen Victoria Market).

Apprentices can choose to train either as a day release (one day per fortnight and a total of twenty-two days per year) or block release (four weeks of five days during January, April, July and September of each year).

Four workplace based training and assessment sessions are coordinated with your chef each year. Each visit assesses workplace competence, theory units and transfer of learning to the workplace.

Apprentices spend 140 hours per year in off the job cooking at Hospitality Training Australia’s commercial training kitchen.

Record of Practical Work Flow

In preparation for each session the apprentice is required to bring to each cooking day a completed Record of Practical Work Flow

The document should be signed by the apprentice and the chef or supervisor prior to commencement of the practical kitchen cooking day.
